Postharvest quality and reactive oxygen species metabolism improvement of <i>Coprinus comatus</i> mushroom using allyl isothiocyanate fumigation

Abstract The aim of this study was to evaluate the effect allyl isothiocyanate (AITC) on reactive oxygen species (ROS) metabolism and quality postharvest Coprinus comatus (C. comatus). Fresh mushrooms were stored at 4 °C with AITC 5, 10, 20 μL/L for 18 d, respectively. Sampling performed every 3 physicochemical parameters ROS related enzymes activities analyzed. Compared control, application 10 significantly (P&amp;lt;0.05) decreased xanthine oxidase activity after 9 d storage, while it improved succinic dehydrogenase, glutathione reductase, peroxidase, catalase, ascorbate peroxidase in middle later stages storage. Furthermore, Ca2+-ATPase superoxide dismutase sample treated by all higher than those control. Therefore, accumulation trends malondialdehyde retarded membrane integrity maintained. However, high-concentration (20 μL/L) treatment accelerated generation increased electrolyte leakage rate. All treatments inhibited respiration rate during first storage browning C. d. These findings suggested that would be a promising method maintain quality, but concentrations need optimized.
